Thermomix Conversion of Grain-free Sandwich Bread Recipe

Quite some time ago I wrote a recipe review of the Against All Grain recipe for grain-free sandwich bread which was Paleo diet and SCD (Specific Carbohydrate Diet) suitable.


I made this using my Thermomix and I have had a number of requests to provide the “Thermy’ conversion – so here it is! I apologise for the rather long delay in posting this but I have been having an extended time away from the computer to concentrate on the family,  play with a few crafty projects and delve into my family history research again.

So here you go…..


1 cup extra smooth raw cashew butter at room temperature ( I used store bought but you could make your own in the Thermomix – there are a few recipes on the Thermomix forums)
4 large eggs, separated
1/2 to 2 tablespoons honey (use 2tbl if you plan to use if for sweeter dishes like french toast)
2.5 teaspoons apple cider vinegar
1/4 cup almond milk
1/4 cup coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt


  1. Preheat your oven to 160 degrees C.
  2. Line a standard loaf tin (21 x 11 cms)
  3. Insert butterfly in the Thermomix bowl. Add egg whites and beat without the measuring cup (MC) in place for 3-5 mins at 50 degrees on speed 4 until stiff peaks are achieved. Set egg whites aside in a separate bowl.
  4. Place egg yolks and cashew butter in the Thermomix and mix on speed 5 for 30 secs. Then add honey, vinegar and almond milk and mix on speed 5 for a further 15 secs.
  5. Place dry ingredients into Thermomix bowl with the cashew butter mixture and mix on speed 6 for 10-15 secs.
  6. Next gently add the egg white mixture and mix on speed 1.5 for 10 secs and then for a further 10 secs on REVERSE speed 1.5. You may use the spatula in the bowl during this to incorporate more easily.
  7. Pour batter into loaf tin and place in oven and cook for 45-50 mins until skewer comes out clean.
  8. As with the original recipe do not open the oven door at any stage before the 40 min mark.
  9. Remove from oven, leave to cool in tin for 15-20 mins before removing from tin and cooling on a wire cooling rack.
